Version 2:

12 Pitted Dates

1 C Rolled Oats

1/4 C Cashews

1/4 C Protein Powder

1/3 C Maple Syrup

2 Tbs Coconut Oil, melted

1/4 Tsp Salt

1/3 C Dark Chocolate Chips

Process dates in a food processor until they become a ball of sticky dough. Add oats, protein powder and salt, process until the oats are broken down and everything is mixed. Add nuts or nut butter, maple syrup and oil, process until it becomes a cohesive dough.

Dump dough into a small 8x8 brownie pan, or 8" pie pan that is lined with parchment or wax paper. Use your hands to mix in the chocolate chips, and then start spreading the dough to the edges of the container. Use a second piece of parchment/wax paper on top of the dough to smooth and spread until the dough is even and all the way to the edges of the pan.

Place pan in freezer for 15 minutes. Remove and slice into desired shape/size. Store in airtight container or ziplock in the freezer. Thaw a few minutes before eating.
